Totally Failed today!!

Well we wbnt for chinese food for lunch and I had a few (about 5 pieces) of the best honey garlic ribs I have ever had. I sure could of eaten more. Dinner will be vegetarian tonight though as Deb is making her spinach and cheese rollups. Damn those ribs were good that is what makes this so hard for me. I did resist the sausage at breakfast – it really did not do much for me looking at it.

In other news I am done 2 sizes since I last shopped for clothes. I am assuming this is mostly because of changes I have made in my diet because of colitis. I have certainly not been trying to lose weight as it never works that way for me. I am probably down 60-70 pounds now. Perhaps I will be brave enough to post a pic of me in my new black dress!

Well I did make beef stroganoff last night. But I mostly ate the sauce and gave about half of the meat to the dogs. They liked it. I am not sure yet what today brings. I know I will have eggs for breakfast but that is as far as I can plan. Madison, one of our dogs had a stroke last night. She is recovering but the day is up in the air. (check out my other blog for an update on her in a little bit. If I have time to cook I am going to make the soup/stew I mentioned yesterday if not I will do it tomorrow.

Oh, and the good news is that my colon handled that salad fairly well the other day. I did not have any serious repercussions from it. I am very happy about this as I like salad and I have been missing it. It does not mean that I can eat it everyday but for now once a week should be ok.

Well, it ended up being a better day than I had anticipated. I did not end up eating beef (although I probably will today). I had shrimp and some caesar salad (with a bit of bacon in it). I had eggs for breakfast and did not eat lunch. This was the first salad I have had in a very, very long time because of my colitis.

One of my friends recommended a vegetarian cookbook so I have ordered it. Maybe I just need some new ideas. I also ordered an Indian one as well because I love Indian food. I will post a review once I get them.


Becoming Vegetarian

This blog will reflect my attempts at becoming a vegetarian. The main reason I am doing this is because I have colitis and there is an acid in meat that promotes inflammation – a very bad thing for colitis sufferers. Although my disease is currently in remission thanks to imuran there is no guarantee it will stay that way. I also have other inflammation issues related to colitis.

Here is my plan. I have stopped eating beef and pork for the past couple of weeks. I am currently eating chicken and seafood. I am striving for 4 meat free days per week. So, check in and see how I am doing. If you have any suggestions please leave them in the comments. I will try and post some recipes I like that are vegetarian.
