Well, I had been doing quite well up until I started the blog! However I have been craving beef horribly for days. Part of the problem is that I have a hard time eating vegetables, beans and salad. My colitis is newly in remission so there is still some inflammation in my colon that makes digesting anything with fibre difficult. I also have IBS and it is not responding well to the changes in diet. So I am backing of a little bit. I had a bacon cheese burger from dairy queen last night. It was so good! I normally do not eat that kind of stuff, ever. Today I have decided I am going to make beef stroganoff because I have been craving it so badly. Then I will start over again – it is a process after all.

WordPress–bah! How can there be a theme that doesn’t have a link for an RSS feed in some obvious place? I see one for comments, but not for the main blog.
Best wishes on (gradually) going veggie. It’s very true that a vegetarian diet is likely to be high in fibre and rough on your innards in a different way.
Sweetie and I try to eat animal (meat or fish) only once a day, if that. I eat a lot of salads with beans, cheese, and almonds (might be hard on your colon). We eat stir fried veggies with tofu. We have some pasta recipes with things like pine nuts or sunflower seeds. We make bean burritos with cheese and some yogurt topping. Look for recipes on the web that sound appealing. The only way to be happy not eating meat is to enjoy what you are eating.
